Form E 2.17 question

Asks for details of savings interest and other investment income in last financial year (6/4/23 - 5/4/24). Only savings interest applies for me.

Feels a bit bizarre given rest of form is for the prior 12 months, but does this mean I need to provide more than 12 months of bank statements to evidence the interest earned all the way back to 6 April 2023?

I'm not sure but to stay in the good graces of the court and to not be the one to hold things up I would do exactly that, cover from the start of the fiscal year

No, you shouldn't have to provide more than 12 months statements unless the court specifically asks you to because there are non-disclosure concerns.
